Ingredients

  • 1/4 cup olive oil, divided
  • 2 yellow onions, sliced
  • Kosher salt and freshly ground black pepper
  • 3 garlic cloves, thinly sliced
  • 2 sprigs fresh thyme
  • 2 medium yellow squash thinly sliced, divided
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. pure honey
  • 1 lb. dried white beans, such as navy, Great Northern, or cannellini, soaked overnight and drained
  • 4 cups chicken stock
  • 1 bunch scallions, trimmed
  • 1 Tbsp. cider vinegar

Directions

    1. Step 1Preheat oven to 300°F. Heat 2 tablespoons oil in a Dutch oven or large ovenproof pot over medium-high heat. Add onions and season with salt and pepper. Cook, stirring often, until soft and beginning to brown, 8 to 10 minutes. Add garlic, thyme, and 1 squash and cook, stirring occasionally, until soft, 8 to 10 minutes (add up to 1/4 cup water if pot starts to get too dark). Stir in Dijon and honey.
    2. Step 2Add beans, stock, and 1 cup water. Cover and transfer to oven. Bake until beans are nearly tender, 1 1/2 to 2 hours.
    3. Step 3Meanwhile, toss scallions, remaining squash, and 2 tablespoons oil in a bowl. Season with salt and pepper. Uncover pot, stir in vinegar, and top with squash and scallions. Bake, uncovered, until beans are tender and liquid is reduced and thickened, 1 to 1 1/2 hours.
    4. Step 4Turn oven to broil. Broil until scallions and squash are golden and lightly charred, 4 to 6 minutes.
    5. Step 5Cool slightly before serving.
