When tomatoes are at their juicy summer peak, they're too good to save just for salads and sandwiches. This savory tomato martini transforms the season's best produce into an elegant cocktail with bright, fresh flavor and just the right amount of briny complexity. Whether you're hosting a dinner party, serving appetizers on the patio, or simply looking for a cocktail that feels a little unexpected, this tomato-forward drink is a delicious way to toast tomato season.

Use either a London Dry Gin such as Beefeater (its crisp, clean flavor will stand out against the sweet, acidic tomato) or a botanical-style gin such as Hendrick’s (its cucumber-forward flavor will complement the tomato nicely, making the drink similar to a Bloody Mary).

Ingredients

  • 1 cup grape tomatoes, plus more for garnish
  • 1 1/2 oz. gin
  • 1/4 oz. dry vermouth

Directions

    1. Step 1Place tomatoes in a liquid measuring cup and muddle until all their juice is released. Strain through a fine mesh strainer (you want ½ ounce of liquid); discard solids. Combine gin, vermouth, tomato juice, and ice in a cocktail shaker. Shake until very cold, about 20 seconds. Serve immediately, garnished with a tomato.
