Ingredients
- 1/3 cup extra-virgin olive oil
- 6 cloves garlic, sliced
- 2 to 3 dried red chiles (such as Arbol), lightly crushed
- 2 tsp. lime zest + lime wedges for serving
- Kosher salt
- 4 ears sweet corn
Directions
- Step 1Heat oil, garlic, and chiles in a small saucepan over medium heat until garlic is just beginning to turn golden brown, 2 to 3 minutes. Remove from heat and stir in lime zest. Season with salt.
- Step 2Cook corn in a large pot of boiling salted water until tender, 5 to 8 minutes; drain. Slice into 1 1/2" disks.
- Step 3Serve corn drizzled with garlic oil and lime wedges alongside.
