Ingredients
- 1/4 cup olive oil
- 1/4 cup rice wine vinegar
- 1 Tbsp. finely grated fresh ginger
- 2 tsp. sugar
- 3/4 tsp. red pepper flakes
- Kosher salt
- 2 large cucumbers, halve lengthwise, seeded, and sliced
- 1/2 lb. mini sweet peppers, sliced
- 1/2 red onion, chopped
- 1/3 cup torn fresh basil
Directions
- Step 1Combine oil, vinegar, ginger, sugar, and pepper flakes in a bowl. Season with salt.
- Step 2Add cucumbers, onion, basil, and toss to combine. Chill 15 minutes.
