I Tried Erin Napier’s Go-To Zucchini Bar Recipe—Here's My Verdict

National Good Neighbor Day is coming up on September 28th. To celebrate, Bob’s Red Mill is encouraging people to share some home-baked kindness with their neighbors. Whether inviting them over for a pizza night or dropping a batch of homemade cookies off at the porch, it’s all about bringing people together by sharing food.

To inspire more acts of “Moregetherness” as Bob’s Red Mill has coined it, Bob’s teamed up with Ben and Erin Napier of HGTV’s Home Town (read all about it in our interview with Ben and Erin). For the occasion, Erin shared her recipe for Zucchini Oatmeal Bars. She makes a batch of these bars to give whenever someone in her community welcomes a new baby, which fits right in with the sharing and celebration of National Good Neighbor Day and Moregetherness.

I tried out the recipe for Erin’s zucchini bars, and as you can imagine, they nearly flew off the plate when I set them out in our office! They were the perfect little midday snack.

What I love about these bars is that this is the kind of recipe that doesn’t take too much work. You need to grate some zucchini, and you’ll want to squeeze out as much water from them as you can, but aside from that, everything is added to a big bowl and stirred together. Easy!

As mentioned, these oatmeal bars are a nice snack because they’re not too sweet, and they could even be a fun grab-and-go breakfast. I know I would be delighted if someone dropped off a batch of these at my house!

Ingredients

  • 1 cup shredded Zucchini, from 1 medium Zucchini
  • 2 eggs
  • 1 cup milk
  • 1/4 cup water
  • 3 Tbsp. maple syrup
  • 2 Tbsp. melted coconut oil
  • 1 tsp. vanilla
  • 1/4 cup brown sugar
  • 3 cups quick cooking rolled oats or old-fashioned rolled oats
  • 1/3 cup organic unbleached white all purpose flour or Gluten Free 1-to-1 Baking Flour
  • 1 Tbsp. flaxseed meal
  • 1 tsp. baking powder
  • 1/4 tsp. fine sea salt
  • 1/2 cup chocolate chips plus extra for sprinkling

Directions

    1. Step 1Preheat oven to 350°F. Line a 9 x 13-inch baking dish with parchment and set aside.
    2. Step 2Place shredded zucchini between two paper towels and drain very well. 
    3. Step 3In a medium bowl, mix wet ingredients together. Then add dry ingredients, stirring in drained zucchini and chocolate chips last.
    4. Step 4Pour mixture into prepared baking dish, sprinkle with additional chocolate chips, and bake for about 30 minutes, until set.
    5. Step 5Let cool, then cut into bars for breakfast or squares for snacks.
