Salmon in Foil with Vegetables

This quick-cooking recipe is practically mess-free, and you cook the vegetable sides right alongside the main. To make it even faster, simply prep the packets ahead of time and chill until you're ready to bake them.

Ingredients

  • 4 (6-ounce) skin-on salmon fillets
  • Kosher salt and freshly ground black pepper
  • 4 Tbsp. (1/2 stick) unsalted butter, melted, plus more for foil
  • 2 tsp. chopped fresh dill, plus more for garnish
  • 1 tsp. garlic, finely chopped
  • 1 tsp. lemon zest
  • 1 red bell pepper, sliced
  • 1 cup frozen corn, thawed
  • 1 cup frozen lima beans, thawed

Directions

    1. Step 1Preheat oven to 400°F. Season salmon with salt and pepper. Butter the center of four large sheets of foil and top each with one piece of salmon, skin-side down. 
    2. Step 2Combine butter, dill, garlic, and lemon zest in a bowl. Spoon butter mixture over salmon, dividing evenly. Top with pepper, corn, and lima beans, dividing evenly. Tightly wrap contents in foil and place on a baking sheet. Bake until salmon is just cooked through, 15 to 20 minutes. Garnish with dill.
