Baked Onions with Fennel Breadcrumbs
This simple side dish is an easy way to make the most of extra onions.

Ingredients
- 6 medium-size onions, peeled and halved crosswise
- Kosher salt and freshly ground black pepper
- 6 Tbsp. (3/4 stick) unsalted butter, cut into pieces, plus 2 tablespoons melted
- 2 tsp. fennel seeds
- 1/2 cup panko breadcrumbs
- 2 tsp. chopped fresh thyme
Directions
- Step 1Preheat oven to 450°F. Line a large rimmed baking sheet with aluminum foil. Place onions, cut-side up, in cups of a standard-size muffin tin. Season with salt and pepper. Top with butter pieces, dividing evenly; place on prepared baking sheet. Bake until onions are tender and brown, 50 minutes to 1 hour.
- Step 2Meanwhile, toast fennel seeds in a small skillet over medium heat until fragrant, 3 to 5 minutes. Crush with a mortar and pestle or spice grinder. Combine breadcrumbs, thyme, crushed fennel, and melted butter in a bowl. Season with salt and pepper.
- Step 3Top onions with breadcrumb mixture, dividing evenly. Bake until breadcrumbs are crisp and browned, 5 to 7 minutes.
