Spiced Roasted Peanuts

Ingredients

  • 3 Tbsp. olive oil, plus more for baking sheet
  • 1 (24-ounce) bag jumbo, raw, natural dry peanuts (not green)
  • 2 tsp. smoked paprika
  • 1 Tbsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cumin
  • 1/2 tsp. garlic powder

Directions

    1. Step 1Preheat oven to 350°F. Lightly grease a large rimmed baking sheet with oil. Rinse and drain peanuts. Whisk together paprika, salt, pepper, coriander, cumin, and garlic powder in a bowl. Add peanuts and oil and toss to coat. Transfer to prepared baking sheet. 
    2. Step 2Bake, stirring once, until fragrant and roasted, 34 to 36 minutes.
