Grilled Sea Scallops with Parsley-Shallot-Honey Sauce

Ingredients
- Canola oil, for grill grates
- 1 Tbsp. chopped shallot
- 1 lemon, peeled and chopped, plus 2 teaspoons juice
- 1 tsp. pure honey
- Kosher salt and freshly ground black pepper
- 1/4 cup chopped fresh flat-leaf parsley
- 2 tsp. chopped fresh thyme
- 1/4 cup plus 1 tablespoon olive oil, divided
- 16 large sea scallops, muscle discarded
Directions
- Step 1Set up grill for direct cooking and heat to medium-high. Once hot, clean and oil grill grates. Combine shallot, chopped lemon and juice, and honey in a bowl; stir until honey is dissolved. Season with salt and pepper. Let stand 5 minutes. Add parsley, thyme, and 1/4 cup olive oil.
- Step 2Drizzle scallops with remaining tablespoon olive oil. Season with salt and pepper. Grill, turning occasionally, until cooked through, 4 to 6 minutes. Serve with sauce.
