Carrot and Cucumber Slaw
Serve this crunchy slaw with grilled chicken or on top of cold soba noodles

A julienne peeler gives this salad gorgeous texture and serious crunch, but no special tools are required. Thinly slicing the carrots and cucumber works beautifully, too.

Ingredients
- 2 Tbsp. white miso
- 3 Tbsp. unseasoned rice wine vinegar
- 1 Tbsp. fresh lime juice
- 1 tsp. roasted sesame oil
- 1/4 cup canola oil
- Freshly ground black pepper
- 1 lb. carrots, cut with a julienne peeler
- 1 English cucumber, cut with a julienne peeler, stopping at the seeds
- 3 scallions, halved crosswise then thinly sliced lengthwise
- 1/2 cup chopped salted peanuts
- 1/4 cup chopped fresh mint
Directions
- Step 1Whisk together miso, vinegar, lime juice, and sesame oil in a bowl. Slowly whisk in canola oil. Season with pepper. Add carrots, cucumber, scallions, peanuts, and mint; toss to combine. Serve immediately.
