Lemon Verbena Iced Tea

This refreshing summer drink from the new Full Belly Farm & Kitchen cookbook is soon to be your warm-weather favorite. It’s made with fresh or dried lemon verbena leaves—if you don’t have a plant or can’t find the leaves locally, look for them online through sites such as Etsy.

Ingredients

  • 2 oz. fresh lemon verbena (about 5 cups)
  • 1/2 cup sugar or honey, or to taste
  • Lemon verbena sprigs or lemon slices, for garnish

Directions

    1. Step 1Bring 1 gallon of water to a boil in a large pot. Remove from heat and add lemon verbena. Cover and steep for 15 to 20 minutes (taste as you go and adjust steeping time to your preference).
    2. Step 2While the tea is still warm, stir in sugar or honey until dissolved. Adjust sweetness to your preference. Strain through a fine-mesh strainer into a pitcher. Cool to room temperature, then refrigerate until chilled.
    3. Step 3Serve over ice garnished with a sprig of lemon verbena or a slice of lemon.
