Ingredients

  • 1 cup warm whole milk
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 2 Tbsp. unsalted butter, melted
  • 1 tsp. pure vanilla extract
  • 4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp. instant yeast
  • 1/2 tsp. kosher salt
  • 3 cups canola oil
  • Confectioners’ sugar, for dusting

Directions

    1. Step 1Whisk together milk, sugar, eggs, butter, and vanilla with an electric mixer on medium speed until com- bined. Add flour, yeast, and salt. Beat with a dough hook on medium speed until dough is smooth and glossy, 5 to 6 minutes. Cover bowl with a dish towel and let sit in a warm place until doubled in size, about 1 hour.
    2. Step 2Line a rimmed baking sheet with paper towels. Place oil in a medium pot with a deep-fry thermometer attached. Heat to 365°F over medium-high heat. Pull dough into golf ball-size balls. Fry, in batches, turning once, until golden brown, 2 to 4 minutes. Use a slotted spoon or spider to transfer to prepared baking sheet. Dust doughnuts with confectioners’ sugar.
