Brandied Cherry-and-Chocolate Chunk Ice Cream

Ingredients

For the brandied cherries:

  • 3/4 lb. fresh sweet cherries, pitted and roughly chopped
  • 1/3 cup sugar
  • 1/2 cup brandy

For the ice cream:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 2/3 cup sugar
  • 1/4 tsp. kosher salt
  • 6 large egg yolks
  • 3/4 cup semisweet chocolate chunks, chopped

Directions

    1. Step 1Make brandied cherries: Combine cherries, sugar, and brandy in a bowl. Refrigerate at least 12 hours and up to 2 days. Drain. 
    2. Step 2Make ice cream: Combine cream, milk, sugar, and salt in a medium saucepan. Cook, over low heat, stirring occasionally, until sugar is dissolved, 4 to 6 minutes. Whisk together 1/3 cup cream mixture and egg yolks in a bowl until fully combined. Slowly whisk yolk mixture back into saucepan. Cook over medium-low heat, stirring constantly, just until mixture starts to thicken and reaches 170°F on an instant-read thermometer, 8 to 10 minutes. Transfer to a bowl or storage container and cool 30 minutes. Once cooled, chill, covered, at least 4 hours and up to 24 hours. 
    3. Step 3Stir brandied cherries into cream mixture. Churn per the ice-cream maker’s instructions, adding chocolate during the last minute of churning. Transfer to a bowl or storage container and freeze until firm, at least 2 hours.
