Beef Enchiladas

This easy meal is about as tasty as it gets.

If casseroles didn't exist, we don't know how our families would be fed. These homey dishes are so comforting and delicious — and making them is so hands-off easy —that we find ourselves turning to them again and again. 

This ground beef enchilada dinner is especially a winner. A little taco seasoning, some corn tortillas, a can of enchilada sauce, cover it with cheese and boom! You've got a powerhouse meal for four (or for two, with leftovers) ready to go.

Ingredients

  • 2 Tbsp. olive oil
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, chopped
  • Kosher salt and freshly ground black pepper
  • 1 (4-ounce) can mild hatch green chiles
  • 1 Tbsp. taco seasoning
  • 1 lb. 85% lean ground beef
  • 1/2 cup canola oil
  • 8 corn tortillas
  • 1 (15-ounce) can enchilada sauce
  • 4 oz. Monterey Jack, grated (about 1 cup)
  • 4 oz. Cheddar, grated (about 1 cup)
  • Chopped Roma tomatoes, red onion, and sliced avocado, for serving

Directions

    1. Step 1Preheat oven to 375ºF. Heat olive oil in a large skillet over medium heat. Add onion and garlic. Season with salt and pepper. Cook, stirring occasionally, until onion is soft, 6 to 8 minutes. Add chiles and cook, stirring occasionally, until liquid has cooked off, 3 to 4 minutes. Add taco seasoning and cook, stirring, until fragrant, about 1 minute. Add beef and cook, breaking it up with a wooden spoon, until no longer pink, 4 to 6 minutes; transfer to a bowl. 
    2. Step 2Wipe the skillet clean. Heat canola oil in skillet over medium-high heat. Fry tortillas, one at a time, turning once, until golden brown, about 1 minute. 
    3. Step 3Place 1 cup enchilada sauce in the bottom of an 8- by 8-inch broiler-proof baking dish. Combine Monterey Jack and Cheddar in a bowl. Working one at a time, dip fried tortillas in sauce, then fill with 1/3 cup meat mixture and a sprinkle of cheese. Roll up and place, seam sidea down, in prepared pan. Top with remaining sauce and cheese. 
    4. Step 4Cover baking dish with aluminum foil. Bake until warmed through, 18 to 20 minutes. Uncover and switch the oven to broil. Broil until cheese is golden brown, 1 to 2 minutes. Let rest 5 minutes before serving. Serve with tomatoes, red onion, and avocado alongside.
