Snap Pea Salad with Feta, Almonds, and Prosciutto

This hearty spring salad is practically a meal by itself.

One of our favorite signs of spring is fresh snap peas from the farmers' market or a roadside stand. (Or best yet: straight from the garden.) And one of our favorite ways to eat those peas is in a big, herby, meal-sized salad. Watercress, feta, crunchy veggies, and some thin slices of proscuitto and roasted almonds fill out the bowl, and a fistful of fresh mint and tarragon mixed with yogurt turns into a dressing that has us licking our forks.

Trust us, this salad is a keeper.

Ingredients

  • 1 Tbsp. chopped fresh mint
  • 1 Tbsp. chopped fresh tarragon
  • 1/2 cup plain yogurt
  • 2 Tbsp. mayonnaise
  • 1 tsp. lemon zest, plus 2 tablespoons lemon juice
  • 1 clove garlic, chopped
  • 1 Tbsp. Dijon mustard
  • Kosher salt and freshly ground black pepper
  • 5 oz. watercress
  • 5 oz. snap peas, trimmed and thinly sliced
  • 2 oz. Feta, crumbled (about 1/2 cup)
  • 1 carrot, cut into sticks
  • 4 radishes, cut into wedges
  • 1/3 cup roasted almonds, chopped
  • 4 slices prosciutto, torn

Directions

    1. Step 1Whisk together mint, tarragon, yogurt, mayonnaise, lemon zest and juice, garlic, and mustard in a bowl. Season with salt and pepper. Toss together watercress, snap peas, Feta, carrot, radishes, almonds, prosciutto, and half the dressing in a bowl. Serve with remaining dressing alongside.

Tip: When you prep snap peas, you'll want to remove the tough "string" that lines the outside edge. You can find stringless varieties and some stores sell them already trimmed, but we find that, if you put a little music on and give yourself about 5 minutes, it's an easy, dare we say meditative task. Just snap the very tip off one end of the pea and start pulling. You should see the string unzip from the inner side of the pea. A paring knife can also help.
