A combo of whipped cream and ice-cream sandwiches, this semi-homemade semifreddo is the ultimate easy-to-make dessert. You can assemble it in minutes and then leave it in the freezer up to two days before your dinner party. Drizzle the cinnamon-chocolate drizzle on just before serving, then slice it up and enjoy!

Ingredients

  • 2 Tbsp. confectioners’ sugar
  • 1/2 tsp. pure vanilla extract
  • 1 cup heavy cream plus 5 tablespoons, divided
  • 12 mini ice-cream sandwiches
  • 1 cup semisweet chocolate chips
  • 1/2 tsp. ground cinnamon

Directions

    1. Step 1 Beat confectioners’ sugar, vanilla, and 1 cup cream with an electric mixer on medium-high speed until soft peaks form, 1 to 2 minutes.
    2. Step 2Line a 9- by 5-inch loaf pan with plastic wrap, leaving a 4-inch overhang on all sides. Spread 1/2 cup whipped cream on bottom of prepared pan, and top with 4 ice-cream sandwiches. Repeat two more times, ending with a layer of whipped cream. Freeze at least 8 hours and up to 2 days.
    3. Step 3Melt chocolate chips, cinnamon, and remaining 5 tablespoons cream in a microwave-safe bowl on HIGH, stopping to stir halfway through, just until melted and smooth, 45 seconds to 1 minute. Cool slightly.
    4. Step 4Remove ice-cream cake from freezer and lift onto serving plate; discard plastic. Drizzle chocolate sauce over top. Slice with a serrated knife.
