Black Beans with Mushrooms and Scallions

Ingredients

  • 1 Tbsp. vegetable oil
  • 1 bunch scallions, chopped, white and green parts separated
  • Kosher salt and freshly ground black pepper
  • 2 cloves garlic, chopped
  • 1 (8-ounce) package sliced fresh mushrooms
  • 1 tsp. chili powder
  • 1/2 tsp. smoked paprika
  • 2 (15.5-ounce) cans black beans, rinsed
  • 1 (4-ounce) can diced green chiles

Directions

    1. Step 1 Heat oil in a medium skillet over medium-high heat. Add scallion whites and season with salt and pepper. Cook, stirring occasionally, until soft, 2 to 4 minutes. Add garlic and mushrooms. Cook, stirring occasionally, just until mushrooms are softened, 6 to 8 minutes. Add chili powder and smoked paprika. Cook, stirring occasionally, until fragrant, 1 to 2 minutes. 
    2. Step 2Add black beans and green chiles. Cook, stirring occasionally, until simmering, 3 to 5 minutes. Season with salt and pepper. Serve topped with scallion greens.
