Waldorf Salad Flatbread

You're probably familiar with Waldorf salad — that classic crunch fest composed of apples, walnuts, and celery dressed in a mayo dressing, invented at the Waldorf Astoria hotel, and beloved as a fall treat ever since. We took all the elements and turned it into a white-sauce style flatbread. Melted Gruyère cheese complements it perfectly. Impress your favorite fall guests—or just surprise your family the next time you're looking to fancy up pizza night.

Ingredients

  • 1/3 cup mayonnaise
  • 1 Tbsp. olive oil
  • Kosher salt and freshly ground pepper
  • All-purpose flour, for work surface
  • 1 recipe Foolproof Pizza Dough, or 1 pound store-bought dough
  • 1/2 large or 1 small apple, cored and thinly sliced
  • 1 stalk celery, thinly sliced, plus leaves for garnish
  • 1/3 cup toasted walnut halves
  • 1/2 cup halved red grapes (from one small bunch)
  • 4 oz. Gruyère, grated (about 1 cup)

Directions

    1. Step 1 Preheat oven to 450°F. Combine mayonnaise and oil in a bowl. Season with salt and pepper. 
    2. Step 2On a floured work surface, roll dough to a 12-inch circle; transfer to a baking sheet. Top with mayonnaise mixture, leaving a 1/2-inch border all around. Top with apple, celery, walnuts, grapes, and Gruyère. 
    3. Step 3Bake until cheese is melted and bubbling and crust is crispy, 10 to 15 minutes. Garnish with celery leaves.
