Ingredients

  • 2 Tbsp. olive oil
  • 1 small sweet onion, chopped
  • 2 garlic cloves, minced
  • 2 1/4 cups chicken stock
  • Kosher salt and ground black pepper
  • 1 1/2 cups long-grain white rice, rinsed until water runs clear
  • 3 Tbsp. chopped fresh flat-leaf parsley

Directions

    1. Step 1Heat oil in a medium saucepan over medium heat. Add onion and garlic. Cook, stirring occasionally, until tender, 4 to 6 minutes. Add stock and season with salt; bring to a boil. Add rice and reduce heat to low. Cover and cook just until rice is tender, 15 to 17 minutes. 
    2. Step 2Fluff with a fork. Season with salt and pepper. Sprinkle with parsley.
