Detroit-Style Pepperoni Pizza

This crispy, chewy, extra-thick pizza is in its own league.

Baked in a pan, this thick crust pizza is topped with a unique combo of cheeses and toppings that go all the way to the edge. The result is both crispy and chewy, extra cheesy and deeply delicious.

Ingredients

  • 2 Tbsp. olive oil
  • 1 recipe Pizza Dough or 1 pound store-bought dough
  • 1 1/2 cups (6 ounces) thick-sliced pepperoni
  • 2 cups store-bought spicy marinara
  • 1 1/2 tsp. dried oregano
  • 6 oz. low-moisture whole-milk mozzarella, cut into 1/2-inch cubes
  • 6 oz. Monterey Jack, cut into 1/2-inch cubes

Directions

    1. Step 1Preheat oven to 500°F with racks in the lower and upper thirds. Pour oil into a Detroit-style or 9-by-13-inch baking pan. 
    2. Step 2Press dough into the bottom and1/2 inch up the sides of the prepared pan. Top with 3/4 cup pepperoni. Top with marinara, spooning it in three rows lengthwise. Sprinkle with oregano. Top with mozzarella and Monterey Jack, being sure to push several pieces between the crust and the sides of the pan. Top with remaining 3/4 cup pepperoni. 
    3. Step 3Bake on the bottom rack until crust is golden brown and cooked through, 18 to 20 minutes. Switch oven to broil and pizza to top rack. Broil until cheese is golden brown and bubbling, 1 to 2 minutes. Let rest on a wire rack 5 minutes. Remove from pan with an offset spatula and transfer to a cutting board; cut into squares.
