What are you doing right now? Whatever it is, stop and take ten minutes to assemble this delicious zucchini bread. Toss it in the oven for an hour, and rejoice, for when it's done you'll be tucking into the ultimate comfort snack: a lightly spiced slice of sweet cakey bread flecked with green zucchini shavings. Though it'll taste great for days, take a piece while it's still warm and cover it in some butter—it's the perfect afternoon tide-me-over.

Zucchini bread may have originated as a way to keep that overabundant garden staple from going bad, but it's also just pure goodness. You can spice your bread with plain old cinnamon but if you have some on hand, use apple pie spice or pumpkin pie spice instead. It deepens the flavor and adds a welcome complexity. And you don't need to stop at zucchini when adding to the batter. Toasted nuts such as pecans or walnuts taste delicious, as do chocolate chips, currants, raisins, craisins, or any variety of dried fruit. The options are endless!

Ingredients

  • 1/2 cup olive oil, plus more for greasing pan
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1 tsp. kosher salt
  • 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. apple pie spice, pumpkin pie spice, or ground cinnamon
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1 medium (6 to 7 inch) zucchini, grated (about 1 1/2 cups)
  • Optional: 1 cup toasted nuts, chocolate chips, raisins, or currants. 

Directions

    1. Step 1Preheat oven to 350°F. Lightly grease an 8 1/2-by-4 1/2 inch loaf pan. Whisk together flour, salt, baking powder, baking soda, and spice in a bowl. Whisk together sugar, eggs, oil, and vanilla in a second bowl.
    2. Step 2Add wet ingredients to dry, and stir to combine. Fold in grated zucchini any any optional mix-ins. Transfer batter too prepared pan (it should be about 3/4 full).
    3. Step 3Bake until a toothpick inserted in the center comes out clean and the bread starts to pull away from the edge of the pan, 50 minutes to 1 hour.
