Spiced Chicken Flatbreads

These Mediterranean-inspired flatbreads are the perfect meal for an alfresco lunch or dinner on a sunny spring day.

Ingredients

  • 1/4 medium red onion, chopped
  • 1/4 cup fresh lemon juice
  • 2 Tbsp. olive oil, divided
  • Kosher salt and freshly ground black pepper
  • 1 lb. small boneless, skinless chicken breasts
  • 1/2 tsp. ground sumac
  • 2 Persian cucumbers, thinly sliced
  • 1/4 cup pomegranate seeds
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 1/2 cup hummus
  • 4 flatbreads or pitas, warmed
  • 1/2 cup crumbled feta

Directions

    1. Step 1Toss together onion, lemon juice, and 1 tablespoon oil in a bowl; let stand 10 minutes. Season with salt and pepper.
    2. Step 2Heat remaining tablespoon oil in a large skillet over medium heat. Season chicken with sumac and salt and pepper. Cook until golden brown and cooked through, 6 to 8 minutes per side. Transfer to a cutting board and let rest 5 minutes; slice.
    3. Step 3Add cucumbers, pomegranate seeds, and parsley to onion mixture and stir. Spread hummus onto flatbreads and top with chicken, cucumber mixture, and feta.
