Ingredients
- 1 (15-ounce) can rinsed white beans
- 1/4 cup fresh flat-leaf parsley, chopped
- 6 Peppadew peppers, chopped
- 2 scallions, thinly sliced
- 2 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- Kosher salt and black pepper
Directions
- Step 1Toss together beans parsley, peppers, scallions, olive oil, red wine vinegar, and kosher salt and black pepper in a bowl.
This recipe can be made ahead and chilled up to 6 hours. Add parsley just before serving.
