This crowd-pleasing dip is a perfect appetizer for game day.

Ingredients

  • 1/4 cup olive oil, divided
  • 3 large sweet onions, chopped
  • Kosher salt and freshly ground black pepper
  • 2 shallots, sliced into thin rings
  • 1 (16-ounce) container sour cream
  • 1 Tbsp. chopped fresh chives
  • Pretzels and potato, beet, and sweet potato chips for serving

Directions

    1. Step 1Heat 2 tablespoons oil in a large skillet over medium heat. Add onions and season with salt and pepper. Cook, stirring occasionally, until onions are a deep golden brown, 35 to 40 minutes.
    2. Step 2Meanwhile, heat remaining 2 tablespoons oil in a small saucepan over medium-high heat. Add shallots and cook, stirring occasionally, until golden brown, 3 to 4 minutes. Transfer to a paper towel-lined plate with a slotted spoon; cool completely.
    3. Step 3Combine sour cream and onions in a bowl. Season with salt and pepper. Top with crispy shallots and chives. Serve with pretzels and chips.
