Maple-Chile Chicken Wings

This game-day favorite benefits from a bit of marinating time before roasting. While frying is the classic method, it’s messy and unnecessary, so opt for the oven instead.

Ingredients
- 1/2 cup dark maple syrup
- 4 Tbsp. unsalted butter, melted
- 1 to 2 tablespoons chipotle chili powder
- 2 tsp. garlic powder
- 1 Tbsp. apple cider vinegar
- Kosher salt and freshly ground black pepper
- 2 lb. chicken wings
- Cooking spray
- Chopped fresh chives, for garnish
Directions
- Step 1Combine maple syrup, butter, chili powder, garlic powder, and vinegar in a bowl. Season with salt and pepper. Toss together wings and half of marinade in a bowl. Refrigerate 1 hour.
- Step 2Preheat oven to 425°F with racks in the middle and upper positions. Line a rimmed baking sheet with foil and lightly grease. Spread wings in a single layer on prepared baking sheet. Bake on the middle rack until cooked through, 30 to 35 minutes.
- Step 3Switch oven to broil. Glaze wings with remaining marinade and broil, on the top rack, until starting to brown, 1 to 2 minutes. Serve garnished with chives.
